Usuba (Vegetable Knife /Single-Bevelled Blade for Right/Left Handed)
Usuba (Vegetable Knife), single-bevelled blade is generally used to not only simply cut the Vegetables,but also involve slicing them into sheets(called "Katsuramuki") or cut them small and intricately for decorative purposes.
While there are some differences in shape between the Kanto(Edo/East) and the Kansai(West) region, the purpose for each Usuba are in most part the same.
However, the Kanto(Edo Style) Usuba has a square tip, and is not suitable for handling small intricate tasks.
