This is a Yoshihiro Unagisaki(Eel Knife) Osaka Style, made of Yasuki White Steel(Shirogami)#2 with Hammered Finish.
Unagisaki used in Osaka are specifically designed to fillet from the ventral side of the eel. Similar in shape as a kiridashi knife. This also can be used for fishing to clean and fillet the fish.
