Yoshihiro RGB Santoku 165 mm – Aogami #2 Blue Steel Kurouchi Japanese Vegetable Knife
The Yoshihiro RGB Santoku 165 mm features a Yasuki Aogami #2 (Blue Steel #2) core with carbon steel cladding and a distinctive Kurouchi finish.
Aogami #2 is a high-carbon Japanese steel known for excellent sharpness and edge retention. Its carbon steel construction provides the characteristic cutting performance and feel appreciated by users of traditional Japanese knives.
The Kurouchi finish is created by leaving part of the dark oxide surface formed during heat treatment on the blade, giving the knife its distinctive rustic appearance.
The Santoku is a traditional Japanese double-bevel multi-purpose knife designed for slicing, chopping, and general preparation of meat, fish, and vegetables.
The blade is paired with an octagonal Blue Oak handle, providing a comfortable and secure grip while adding a distinctive natural character to the knife.
