The Kouichi Morimoto White Steel #2 Santoku is a hand-finished Japanese kitchen knife crafted by master craftsman Kouichi Morimoto, a highly respected sharpening specialist from Sakai, Japan.

Kouichi Morimoto was certified as a Master of Japanese Traditional Crafts for blade grinding and sharpening by Japan’s Ministry of International Trade and Industry in 1987. He was also awarded “Naniwa-no-Meiko” (Master Craftsman in Osaka) by the Osaka prefectural government in 2005.

The blade is made from Yasuki White Steel #2 (Shirogami #2), a high-purity Japanese carbon steel known for its exceptional sharpness, fine edge quality, and ease of sharpening. The refined Kasumi finish highlights the traditional craftsmanship and elegant appearance of the blade.

The Santoku is a versatile Japanese all-purpose knife designed for slicing, cutting, and chopping meat, fish, and vegetables. It is suitable for both professional kitchens and serious home cooks who appreciate precise cutting performance.
