Sakai Kikumori VG-10 HONGASUMI, KIWAMI V10 Stainless Sakimaru Takohiki
This model, "KIWAMI" is made of VG-10 Stain Resistant Steel, HONGASUMI Professional Sakimaru Takohiki (Sashimi Knife) for Right Handed, with Professional Handle ,called "Buffalo Horn Handle"(Magnolia Wood Handle & Buffalo Horn Bolster). Highly recommended for Professionals.
The miniaturization of the composition is realized by addition of vanadium. As the element of Cr ,Mo and V produces hard carbide abundantly, wear resistance improves remarkably at the same time, the sharpness of the blade edge sustains extremely long. A good machinability makes it easy to polish even a hard kitchen knife.
