Yoshihiro YHB Santoku – Aogami Blue Steel #2 Hammered Stainless Clad Japanese Chef’s Santoku
This Yoshihiro YHB Santoku is crafted with a core of Aogami Blue Steel #2 (Aogami #2), a high-performance Japanese carbon steel known for its exceptional sharpness, edge retention, and ease of sharpening.
The blade is constructed using the warikomi (sandwich) method, where the carbon steel core is clad with stainless steel, improving corrosion resistance while maintaining the cutting performance of carbon steel. The hammered finish further enhances food release and gives the blade a traditional handcrafted appearance.
Aogami #2 is widely used in professional Japanese knives for its excellent balance of sharpness and durability, making it suitable for chefs who value performance and edge stability.
It features a Western-style handle made from Black Composite Wood with bolster, offering durability, stability, and a comfortable professional Handle.
The YHB series is a hammered stainless-clad carbon steel line designed for professional use, combining traditional cutting performance with improved maintenance convenience.
